A delicate rosé produced in traditional French style by using the Pinot Noir grape. A big burst of strawberries on the front of the palate that ends with a lovely crisp finish. Displaying elegant and subtle aromas of rose petal and delicious Pinot Noir character with gentle acidity.
The Whitlands vineyard of John Love is situated 800m above sea level at the southern end of Victoria’s King Valley. The cool climate and long ripening period, together with very careful vineyard management result in very small bunches and berries of intensely flavoured fruit.
On arrival at the winery, the grapes are crushed and de-stemmed then pumped to three tonne fermenters. The juice is fermented at cool temperatures, generally less than 25°C, to extract maximum fruit flavour and hand plunged, just like a red wine would be made. However, to achieve Rosé the skins were left to soak for only a few hours then the wine was taken off skins to minimize colour extraction and moved to stainless steel tanks to complete fermentation. Finally, a dollop of Chardonnay was added prior to bottling to round out the palate.
