The fruit is crushed and fermented with regular hand plunging to extract the full flavours and rich colour.\u003c\/p\u003e\n\u003cp\u003eIt has had an extended oak maturation for 20 months in carefully chosen French Oak barrels which has added to it’s depth and complexity.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eLightly crushed fruit, initial fermentation with wild yeast, finished with inoculated yeast, mlf, matured in French Burgundy barriques. Lifted aromas of the countryside, of pepper, briar, bay leaf, and earth mixing with the blackberry spice. Supple structure with ripe tannins. Dark plum and regional mint make for a distinctive palate.
