Our Shiraz is a cool climate style with softness on the front of the palate and good length to the back. Aged in oak for 9 months our Shiraz is able to develop a richness and bold flavour unique to a cool climate region.
The 26 year old vines grow in gravelly soils over mudstone. Our vineyard has a south-east aspect with rows running north-south in the Bobinawarrah Hills. The canopy is managed on the western side to protect the fruit from direct sunlight and ensure even ripening.
This wine was fermented in open three tonne fermenters and hand plunged to ensure good colour and flavour. Fermentation is temperature controlled (<27C) to ensure maximum flavour retention. Pressed in a membrane press to avoid any harsh tannin extractions the wine was then transferred into French oak barriques for Malo-Lactic fermentation. The wine was then matured in French oak for 12 months.
